Summer Lovin' : The endless love of Salads with a Mason Jar twist

Anyone love Salads and eat them EVERY. SINGLE. DAY??

I started eating them a LOT during my prep for my first physique show. In fact, that was the only veggie I ate the last couple of weeks before my show since I was frantically trying to cut body fat to hit my goal. Not something that I would recommend as you will quickly dislike all forms of salad. Did I mention that many of them were without dressing. Just a splash of Himalayan Sea Salt, a tsp of Olive Oil (maybe a tablespoon if I was feeling naughty), and a squirt of Texas Pete. The Texas Pete was the flavor and even that had to be reduced the last week! Can you say SODIUM DEPLETION?!!

Fast forward a few months later and I have found my love of salads again. These days I love arugula and Wild Rocket. I am told the rocket leaves are grass but really isn't just about all salad a form of grass (well, maybe not German Potato Salad but don't tell my mom that). One that has caught my eye in a similar fashion to watching Magic Mike (shhhh, don't tell anyone but I watched it twice), is the Mason Jar Salad. These things are so pretty and delicious you really feel like you are cheating your diet every time you make and eat one.

There are so many varieties but you should know there is a secret special way to rack and stack the items. I tried this without putting much thought in the first few times and it wasn't pretty or even as delicious. Layers go from the following:

This is really easy to understand. Liquids on the bottom, lettuce on top. That's what she said! Oops. From there add in your grains, legumes, protein, and fruit. Strawberries are great if you like a sweeter salad and offer a nice contrast to the green leaves. Hint hint...for my photogs out there.

Happy Mason Jar hunting and till we meet and talk salads again!!

Cindy
